White Alba Truffles (Tuber Magnatum Pico).
Available only during winter season, 3 - 4 months. From end of September to mid January. Our fresh White Truffles (alba/tuber magnatum Pico) come from Northern Italy and they are incredibly flavoursome. An amazing addition to your pasta meals. A mild garlic/buttery taste they are used in the most exclusive Michelin starred restaurants. Due to popularity around Christmas time, the Kg price can gt as high as £4,000. Known as the "Truffle of the white Madonna/Mother"
The Italian Autumn truffle (Tuber Uncinatum)
is closely related to the Summer truffle (Tuber Aestivum), thou it is slightly darker on the inside and known to have a more pleasing fragrance and more taste. The season is from Mid September to November/December. .
Shelf life from delivery is 6-8 days, delivered twice a week, flown directly to us the same day they are foraged.
We do our utmost to ensur you thatyou recieve your truffle order while it is frsh and full of taste. We recommend that you purchase your truffles 3-4 days before you need them. If you are not satisfied with your truffles then please let us know within 48 hhours of receiving them, adding a picture (if/when posssible).
Please do not use the polystyrene box to store the trufffles in, as this is only meant for transport.
Remember to store your truffles wraped in tissue in an airtight container. Inn the middle of the fridge. Change the tissue every few days to ensure the trufles stay dry and retain their taste.
Truffle tip: Storing your truffles with the ingredients you are looking to serve them with/in does actually influence the taste of the product. Such as eggs, rice,salt, pasta and so on.
