We normally get 2 deliveries of Black truffles every week. The bigger the order size the bigger the discount.
The rind or peridium is warty with small and not prominent black opaque warts. The gleba or pulp is black/purplish at full ripening, with thin white veins. The shape is usually rounded in specimens found in cultivated truffle beds while more irregular or lobed in specimens found in natural truffle beds. In truffle cultivations, thanks to the irrigation and soft soil, one can reach a larger sizes (about 700/800 gr). It usually ripens from December to March.
The fruiting bodies of the black truffle exude a scent reminiscent of undergrowth, strawberries, wet earth or dried fruit with a hint of cocoa. Their taste, which fully develops after the truffles are heated, is slightly peppery and bitter. If stored at room temperature, the aromatic compounds dissipate, while storage at around the freezing point (0 °C) leads to an increased synthesis of these compounds.
Shelf life is about 6-8 days after you receive them. If you should have any concerns or questions then please don't hesitate to get in touch.
We do our utmost to ensure that you receive your truffle order while it is fresh and full of taste. We recommend that you purchase your truffles 3-4 days before you need them. If you are not satisfied with your truffles then please let us know within 48 hours of receiving them, adding a picture (if/when possible).
Please do not use the polystyrene box to store the trufffles in, as this is only meant for transport. Remember to store your truffles wraped in tissue in an airtight container. In the middle of the fridge. Change the tissue every few days to ensure the trufles stay dry and retain their taste.
Truffle tip: Storing your truffles with the ingredients you are looking to serve them with/in does actually influence the taste of the product. Such as eggs, rice, salt, pasta and so on.
