We love truffles, just as much as we love our caviar. We sell truffles all year round. #PepUpYourPasta with some delicious mouth-watering truffles! On opening a box of our fresh truffles you will be overwhelmed with a very unique powerful aroma like no other.
As we are in the summer season, the Black Summer truffles (Tuber Aestivum) have a more subtle smell and flavour compared to the autumn and winter truffles that begin to grow around the end of July/ beginnning of August. In accordance to this the truffles that are hunted between April until the end of June they can be less potent and will be slightly cheaper. But as we get towards the end of the summer season, for the last few weeks they gain more inaroma/taste, so we often recommend to try the end of season truffles.
In Autumn they get much stronger in flavour and smell, but there are less of them around at this time and the price goes up every week, in some cases every day. 3 weeks later it's all over for the Aestivum, and then come the Uncinatum.
So please, do enjoy your truffles, don't keep them too long and never add them to the dish too early. We recommend lightly shaving some fresh truffle over your dish whilst its cooking about 2 minutes before turning the heat off, or even later.
Please store your truffles in an airtight container, packed in tissue, and again, don't leave them too long. They can stay fresh for nearly 2 weeks, but don't expect much of an aroma. I'd normally say buy them 2-3 days before you need them.
